Drain completely. Grind dal with very little water to a smooth, fluffy batter. Add salt, green chilli, and ginger. Beat the batter well till airy. Making Vadas Heat oil on medium flame. Wet your hand, take small batter portions, and gently drop into oil. Fry on low-medium flame till vadas turn golden and crisp. Remove and immediately soak in warm salt water for 15 minutes. Gently press each vada to remove excess water. Assembling Dahi Vada Whisk curd with sugar and salt till smooth. Arrange vadas on a serving plate. Pour curd generously over vadas. Add green chutney and sweet tamarind chutney. Sprinkle roasted cumin powder, red chilli powder, and chaat masala. Garnish with chopped coriander. Serving Tips Serve chilled for best taste Add sev or boondi for extra crunch Can be prepared 1 day in advance
