Boil until the color changes slightly — this helps reduce bitterness. Transfer to cold water, rinse well, and keep aside. Make the stuffing masala: Heat oil in a pan, add chopped onions, and roast till golden brown. Add salt, turmeric powder, red chilli powder, and coriander powder. Roast well, then add chopped tomatoes and a little chaat masala. Now add tamarind pulp and cook until the masala thickens nicely. Mix in some fresh coriander leaves. Stuff and cook: Stuff this flavorful masala into each karela carefully. In the same pan, heat a little oil and place all the stuffed karelas. Fry on all sides till golden and tender. And it’s ready!
