Mix gently by hand (don’t over-mix or kababs become hard). Cover and rest the mixture for 20–30 minutes. Heat a flat pan or tawa with medium oil. Take a portion, flatten into wide chapli shape. Fry on medium flame, flipping once, until golden brown. Serve hot with naan, raita, salad, and lemon.
