You’ll need: 🧀 180g / 6.3 oz cottage cheese 🥣 190g / 6.7 oz Greek yoghurt 🍳 2 eggs 🍬 45–50g / 1.6–1.8 oz xylitol (powdered if possible) 🌽 24g / 0.8 oz corn starch 🌼 ¾ teaspoon vanilla 🥛 1 tablespoon cream 🫐 95–100g / 3.3–3.5 oz frozen blueberries How to make it: Preheat the oven to 180°C / 355°F and line a small baking dish with baking paper. Add cottage cheese, Greek yoghurt, eggs, xylitol, vanilla and cream to a blender and blend until completely smooth. Add the corn starch and blend briefly, just until combined. Pour the batter into the lined dish and sprinkle blueberries on top or gently fold them in. Bake for 35–40 minutes at 180°C / 355°F. The edges should be set while the centre remains slightly jiggly. Let it cool fully at room temperature, then refrigerate for 2–4 hours or overnight for best texture.
