This is The Best Creamy Corn Casserole you have ever had! This irresistible Corn Casserole is made with sweet corn, fresh cream, Jiffy cornbread mix and Cheddar/Monterey Jack Cheese. It's creamy and comforting with a golden brown top and makes the perfect side dish. Easy to make, tasty, and great for prepping ahead! Its a a hit with the whole family! Its easy to make and you will want to make it year round! Recipe: Ingredients: • 2 - 14.5 ounce cans of Corn - drained • 1 box of Jiffy Cornbread Mix • 2 Large Eggs • 1 cup of Sour Cream • 1/4 of a cup of Heavy Cream • 1/2 of a stick of melted Butter •1/3 of a cup of Sugar • a pinch of Salt • 1 cup of Shredder Cheddar and Monterey Cheese for Sprinkling on top. Directions: Crack 2 large eggs in a bowl and whisk them up a bit. Add sour cream, heavy cream, melted butter sugar and salt ans whisk to combine. Add the Jiffy Cornbread mix and whisk until smooth. Add the corn and mix until the ingredients are well incorporated. Transfer to a 9x13 inch baking dish and bake uncovered in a pre-heated oven set at 375 degrees for 30-35 minutes until the top is golden brown. Remove from the oven and Sprinkle evenly with shredded cheese. Place back in the oven for another 10 minutes until the cheese is melted and bubbly. Enjoy and Happy Thanksgiving!
