Compared to the popularity of sushi today, it is hard to imagine Sushi was not widely accepted in 1970s North America. Chef Hidekazu Tojo, a Japanese chef who immigrated to Vancouver, British Columbia from Osaka Japan, decided to bring this Japanese delicacy onto the Canadian table. Although confronting many obstacles, Chef Tojo eventually invented the most famous North American sushi roll ever: the California roll. But why isn’t California roll called Vancouver Roll?
