Ingredients: 4.5oz / 125g margarine 4.5oz / 125g caster sugar 1 tablespoon golden syrup 2 large eggs 2 very ripe bananas 2 tablespoons milk 1 teaspoon vanilla extract 7oz / 200g self raising flour - sifted 1 teaspoon baking powder 3.5oz / 100g chocolate - cut into pieces (optional) pinch of salt Preheat oven to 180°C / 355°F Grease a 2lb loaf tin, cake tin or Bundt pan. Step #1 - Blitz bananas, eggs, milk & vanilla extract in a processor until smooth. Step #2 - Beat margarine, sugar & syrup together until pale & fluffy. Step #3 - Add the flour, baking powder, salt & banana mixture, & mix together well until smooth. Step #4 (optional) - Add the chocolate pieces & mix together well. Step #5 - Pour the cake mix into the cake tin & bake for 35-40 minutes until a skewer comes out clean. Leave in the tin for 10 mins, then remove to a wire rack & allow to cool.
