Aloo Gobi| Cauliflower and Potatoes Recipe 🌿 Ingredients Serves 3–4 Main: • Cauliflower – 1 small (cut into florets) • Potatoes – 2 medium (cubed) • Onion – 1 large (finely chopped) • Tomatoes – 2 medium (chopped) • Ginger garlic paste – 1 tbsp • Green chilies – 2 (sliced or chopped) • Fresh coriander – 2 tbsp (chopped) • Oil – ¼ cup Whole Spices: • 1 black cardamom • 1 small cinnamon stick • ½ tsp kalonji (nigella seeds) • ½ tsp ajwain (carom seeds) • 1 tsp cumin seeds Ground Spices: • ½ tsp turmeric powder • 1 tsp crushed red chili (darra mirch) • 1½ tsp coriander powder • ½ tsp garam masala (sprinkled at the end) • Salt – to taste ⸻ 🍳 Cooking Method 1. Heat oil in a karahi or deep pan. 2. Add onions and sauté on medium heat until light golden. 3. Add ginger garlic paste and fry for 30 seconds until fragrant. 4. Add tomatoes and cook until soft and mushy. 5. Now add all spices — black cardamom, cinnamon stick, kalonji, ajwain, cumin, turmeric, red chili, coriander powder, and salt. • Cook (bhunofy) until oil separates from the masala. 6. Add potatoes and cauliflower, mix well, and cover the pan. • Cook on low heat for about 15–20 minutes, stirring occasionally until both are tender. 7. When done, sprinkle garam masala, fresh green chilies, and coriander leaves. 8.
