Step by step recipe for Paneer Butter Masala Ingredients: 200g Paneer 1 medium onion 3-4 medium tomatoes 1 teaspoon garlic paste 1 teaspoon ginger paste 2 green chillies 1 teaspoon turmeric powder 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/2 teaspoon kashmiri chilli powder 2 teaspoon garam masala Salt to taste 1/2 teaspoon cumin seeds / jeera 1 bayleaf 2 cloves 1 inch piece of cinnamon 1 teaspoon coriander seeds 10-12 cashew nuts 1/4 teaspoon sugar (optional) 1 teaspoon kasoori methi 3 tablespoon butter 2 tablespoon fresh cream Recipe: Dice onion and tomatoes in cubes. Slit green chillies. Crush coriander seeds in a mortar-pestle. Cut Paneer in cubes. keep aside. Heat 2 tablespoon of butter in a pan. add cumin seeds, cloves and cinnamon stick. let the spices splutter. Add diced onion and green chillies. Fry for a minute and then add ginger garlic paste. Mix well and again fry till the onion turns translucent. no need to brown the onion. Add tomatoes, red chilli powder and cashew nuts. fry for 5-6 minutes till the mixture turns soft and mushy. Switch off the flame. Let the mixture cool. Then blend it in a mixer to a smooth puree. Heat remaining butter in the same pan. Pour the pureed mixture. add coriander powder, turmeric powder, kashimiri chilli powder. Fry till the mixture leaves oil. Add 1/4 cup water, Salt and sugar (if using). Simmer for a couple of minutes or till the gravy reaches the desired consistency. Lastly Add paneer cubes, kasoori methi and garam masala. sprinkle some crushed coriander seeds. Cook covered for a minute. Add fresh cream and mix well. Switch off the flame. Paneer butter masala is ready to serve. Eat Paneer butter masala with Naan / Roti or Lachcha paratha. You can also have it with steamed or jeera rice.
