Macher kalia recipe with Katla or Rui—Bengali fish kaliya—Bengali fish curry for special occasions | রুই মাছের কালিয়া | Fish Kalia | Rui Macher Kalia | Fish Curry | Bengali Fish Recipe tbsp- tablespoon; tsp- teaspoon Ingredients: Rohu (Rui) fish 400 g Hing 1 pinch Cinnamon stick 1/2 inch Green Cardamom 2 Cloves 3 Whole Cumin seeds 1/4 tsp Dry Red Chili 2 Bay Leaf 2 Green Chilies 2-3 Red Chili Powder 1 tbsp Turmeric Powder 2 tbsp Cumin Paste 1 tsp Coriander Powder 1 tbsp Poppy Seed Powder (Posto) 1 tsp Ginger Paste 1 tbsp Garlic Paste 1 tbsp Onions Chopped 2 medium Tomato Chopped 2 medium *Water 250 ml (correction) Salt As Per Taste Sugar 2 tsp Mustard Oil To Cook Preparation : -Wash and clean the cut fish pieces, place them in a large tray/bowl, add 1 tbsp turmeric powder and 1 tbsp salt, mix and marinade the fish. -Heat 4-6 tbsp mustard oil in a wok/pan, add the marinated fish pieces carefully, fry them on the first side till its complete golden brown, turn over the pieces till its golden brown on both sides and properly fried over high flame. Once done, keep it aside. How to Cook: Step 1 : Heat 6-7tbsp mustard oil in a wok/pan, add bay leaf, 1 pinch hing, cinnamon stick, green cardamom, cloves, dry red chili in the oil, fry 6 minutes over medium flame. Step 2 : Add garlic paste, fry over high flame until slightly brown. Add chopped onions, fry until brown. Add garlic paste. Fry 6 minutes over high flame. Step 3 : Add cumin paste, coriander powder, turmeric powder, red chili powder, chopped tomatoes, sugar and salt (as per taste). Mix all the ingredients & fry over high flame until tomatoes are soft and mushy. Step 4 : Pour 7-8 tbsp water. Fry for a minutes. Sprinkle poppy seeds powder (Posto) and water. Mix well and bring it to a boil over high flame, by then the gravy-ingredients should release a very nice aroma that reaches your nose Step 5: Final Step, add the fried fish pieces in the curry, mix well, this involves coating the fish pieces properly in the gravy/curry. Cover & Simmer 6-7 minutes over high flame. Serve hot with rice, ghee and salads.
