Here’s a simple recipe for “Taroi Aalu Ki Rasoli” ( ridge gourd and potato curry): Ingredients: 2 medium-sized ridge gourds (taroi), peeled and diced 2 medium-sized potatoes (aloo), peeled and diced 1 onion, finely chopped 1-2 green chilies, slit (adjust to taste) 1 teaspoon ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1/2 teaspoon turmeric powder 1 teaspoon red chili powder (adjust to taste) Salt to taste Fresh coriander leaves for garnish 2 tablespoons cooking oil Instructions: 1. Preparation: Wash and peel the ridge gourds and potatoes. Cut them into small cubes. 2. Cooking: Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter. Add the finely chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and green chilies, and sauté for a minute until the raw smell goes away. 3. Adding Vegetables: Add the diced potatoes first and cook for about 5 minutes, stirring occasionally. Then add the diced ridge gourd, turmeric powder, red chili powder, and salt. Mix everything well. 4. Cooking the Curry: Cover the pan and let it cook on low to medium heat for about 10-15 minutes. Stir occasionally to prevent sticking. You can sprinkle a little water if needed to help cook the vegetables. Once the potatoes and ridge gourd are tender, check the seasoning and adjust if necessary. 5. Garnishing: Turn off the heat and garnish with freshly chopped coriander leaves. 6. Serving: Serve hot with roti, paratha, or rice.
