Holiday Leftover Shepherd’s Pie

Ingredients About 2 cups leftover turkey, chopped 1–2 cups leftover stuffing 2 cups leftover mashed potatoes ½–1 cup gravy (or broth) Cranberry sauce (for topping or serving) Optional add-ins: leftover veggies, corn, green beans, peas, sautéed onions Instructions Preheat oven to 375°F. Lightly grease a casserole dish. Press the stuffing evenly into the bottom — this becomes your “crust.” Mix the chopped turkey with the gravy (or a little broth) so it stays moist. Spread evenly over the stuffing. Add vegetables (optional) If you have leftover green beans, carrot, corn, or mixed veggies, add a layer here. Spread the mashed potatoes Dollop mashed potatoes on top and gently smooth into an even layer. Bake for 25–30 minutes, until the top is lightly golden and the edges are bubbling. We put ours under the broiler for just a minute to brown it up. Add a spoonful of cranberry sauce on top of each serving for a sweet-tart contrast. Optional Variations Turkey & Stuffing Muffins: Layer ingredients in a muffin tin for individual servings. Cranberry Swirl: Spread a thin layer of cranberry sauce between the turkey and mashed potatoes. Cheesy version: Add shredded cheddar or mozzarella on top before baking.
