Cardamom Cookies

Cardamom Cookies, my mom's request. These are cardamom cookies shortbread cookies and they are absolutely melt in your mouth delicious. Perfect for the Christmas time. Cardamom is a flavor my Grandma loved, she was Finnish and would make cardamom breads but loved everything cardamom. On my other side of the family we are Norwegian and have a Christmas Bread that also has cardamom so its a loved flavor. They're so easy to make and they will be devoured. Shortbread Cookies: 1 cup butter ½ cup confectioners’ sugar 1 teaspoon vanilla bean paste 1 ½ teaspoons cardamom ¼ teaspoon salt 2 cups all-purpose flour Chill dough for around 30 minutes. Roll out 1/4 - 1/3 " you can make these as thin or as thick as you want and then adjust the bake.
