#diningwithtara ★ Chocolate Strawberry Muffins ★ VEGAN, GLUTEN-FREE, very quick and easy to make and absolutely DELICIOUS! Perfect for meal prep! Busy mornings requires some planning. I know that if I don't plan ahead, I may end up eating something that I wish I hadn't! This recipe is very easy and fast to make. If you don't have all the ingredients, feel free to make substitutions. I love to experiment and incorporate different nutrient dense foods - I am a HUGE fan of superfood powders! I use them in my drinks and meals every day! These muffins are perfect for meal prep and are very easy to store. As soon as they are cooled, I place them (keeping them in the muffin cups) right into the freezer - This makes for a quick GRAB-AND-GO tasty breakfast. No need to defrost or even warm them up. They naturally defrost in a very short period of time while traveling to work or school and taste incredible! They are PACKED with nutrition and provide ENERGY and will help to keep you full until lunch. I usually eat two muffins as a fast and yummy breakfast. When you make these muffins, don't forget to snap a photo and tag me on FACEBOOK, INSTAGRAM AND TWITTER ❀❀❀ Come and cook with me! ★ SUBSCRIBE to my channel - https://goo.gl/H6VaDn ★ Binge watch cooking videos - • Binge Watch Videos INGREDIENTS: ¼ tsp Salt ¼ tsp Pepper ½ cup Almond Flour ½ cup Coconut Flour ½ cup Raw Walnuts ½ cup Hemp Hearts ½ cup Raw Almonds ¼ cup Filtered Water 2 tsp Maca Powder ⅓ cup Raw Cocao Powder 2 tsp Baking Powder 1 medium Zucchini Shredded 2 tsp Ground Cinnamon 2 tbsp Ground Flax Meal 10 medium Strawberries Chopped 1 cup Sprouted Oats + 2 tablespoon ¼ cup Unsweetened Almond Milk ⅓ cup Coconut Sugar + 1.5 teaspoon INSTRUCTIONS: 1. Preheat oven to 350 F 2. Mix flaxmeal w. 0.25 cup Filtered Water and set aside. 3. Combine Raw Almonds and Raw Walnuts in food processor or blender and pulse to grind. 4. Mix together all dry ingredients in large bowl. 5. Grate zucchini and then squeeze excess water out using a paper towel or dishcloth. 6. In a mini food processor puree 6 strawberries. 7. Add zucchini and strawberries to the mixture and stir in flax egg. 8. Pour in almond milk and stir to combine. 9. Fill each muffin cup with 0.25 cup of mixture. 10. Chop 4 strawberries into bite size pieces and add a few pieces to the tops of all muffins. 11. Sprinkle remaining 2 tablespoons of sprouted oats on top of each muffin. 12. Sprinkle remaining 1.5 teaspoons of coconut sugar on top of all 12 muffins. 13. Bake for 20-28 minutes. Remove from oven and allow to cool completely.
