If there is one thing I’ve learned about the Vietnamese, they can take anything and turn it into a 5 star dish. Their ability to create in a kitchen is second to none. Innovation is often born out of necessity. Cook what you have, we’ll make it work. Duc created this because she hates to see food go to waste. She uses everything, even the bones. It’s how she grew up, and it’s one of the many things I love about her. I’d share the recipe, but like me, Duc eyeballs recipes in the kitchen. She can give you a rough idea, but she doesn’t write it down. It tastes different this year than last, and next year will be slightly different as well. However you cook it, give it a try.
