Freshly roasted spices + soft masala-coated okra = next level lunch side dish!🔥 🌿 VENDKKAI MASALA FRY – RECIPE Ingredients For Frying Vendakkai: Vendakkai / Okra – 200g (cut) Salt – as needed Oil – for frying Masala Paste: Ginger – 2 inch piece Coriander leaves + stem – few Pepper – 1 tsp Cumin seeds – 1 tsp Fennel seeds – 1 tsp Coriander seeds – 1 tsp Chana dal – ½ tsp Dry red chillies – 2 Salt – as needed Tomato – 1 (ground into paste) Method 1. Fry Vendakkai 1. Heat oil in a kadai. 2. Add chopped vendakkai and salt. 3. Fry on medium flame till the stickiness disappears and it turns slightly crispy. Keep aside. 2. Prepare Masala 1. Add ginger, coriander leaves, pepper, cumin, fennel, coriander seeds, chana dal, red chillies and salt to a mixie jar. 2. Grind into a coarse paste. 3. Masala Fry 1. Add little oil to the pan and roast the ground masala till it turns aromatic. 2. Add tomato paste and cook till the raw smell goes away and masala thickens. 3. Add fried vendakkai and mix gently. 4. Cook for a few minutes until the masala coats the okra perfectly.
