Beef Kaleji Recipe (English) Ingredients: 500g beef liver (kaleji), cleaned and cut into small pieces 2 medium onions, finely sliced 2 tomatoes, chopped 2–3 green chilies, chopped 1 tbsp ginger garlic paste 1 tsp red chili powder 1/2 tsp turmeric powder 1 tsp coriander powder 1/2 tsp garam masala powder Salt to taste Fresh coriander leaves (for garnish) 1/4 cup oil Lemon juice (optional) Instructions: Heat oil in a pan and fry the sliced onions until golden brown. Add ginger garlic paste and sauté for a minute until the raw smell goes away. Add chopped tomatoes and cook until soft and oil separates. Now add red chili powder, turmeric, coriander powder, and salt. Cook the masala well. Add the beef liver pieces and cook on medium heat for 6–8 minutes. Do not overcook the liver, or it will become hard. Once done, sprinkle garam masala and green chilies. Mix well and cook for another minute. Garnish with chopped coriander and a squeeze of lemon juice if desired. Serve hot with naan or chapati. Beef Kaleji Recipe (Roman Urdu) Ajzaa: 500g beef kaleji, saaf aur tukdon mein kati hui 2 adad piyaz, bareek kati hui 2 adad tamatar, kati hui 2–3 hari mirchain, kati hui 1 chamach adrak lehsan paste 1 chamach lal mirch powder 1/2 chamach haldi 1 chamach dhania powder 1/2 chamach garam masala Namak hasb-e-zaiqa Hara dhania (sajawat ke liye) 1/4 cup tel Lemon juice (chahain to) Tareeqa: Ek pan mein tel garam karen aur piyaz golden brown hone tak bhun lein. Ab adrak lehsan paste daal kar aik minute tak bhunain. Tamatar daal kar achi tarah pakayein jab tak wo naram ho jaayein aur tel alag na ho jaaye. Ab lal mirch, haldi, dhania powder aur namak shamil kar ke masala bhun lein. Kaleji ke tukre daal kar 6–8 minute tak medium aanch par pakayein. Kaleji zyada na pakayein warna sakht ho jaayegi. Aakhir mein garam masala aur hari mirchain daal kar mila lein. Hara dhania aur lemon juice se sajayein. Garma garam naan ya chapati ke saath pesh karein.
