Don't forget to click on the bell icon to get updates. #kathaldumbiryani #vegbiryani #JackfruitBiryani #IndianVeganrecipe #Healthy #PathfinderKitchen #Biryani ----------------------------------------------------------------------------------------------------------------------- Kathal Biryani | Jackfruit Biryani ___________________ Preparation time: 20 minutes Cooking time: 60 minutes Serves: 4 Ingredients _______________ Biryani Basmati Rice - 250 gm Kathal/Fanas/Jackfruit - 250 gm (Chopped into 1½ inch pieces) Green chilli - 5 - 6 Garlic paste - 1 tbsp Ghee/ clarified butter - 2 tbsp Onion - 250 gm Dahi/curd - 2 tbsp Water - 500 ml Milk - 4 tbsp Saffron (Kesar) - 1/2 tsp Cooking oil - 8 - 10 tbsp Salt as per taste Whole spices for tempering: Bay leaves - 2 Black pepper - 6 Clove/Laung - 4-5 Cinnamon stick - 1 inch Black Cardamom - 1 Green Cardamom - 3 For Jackfruit marination: Garlic paste - 1 tsp Kashmiri Red Chilli powder - ½ tsp (optional) Salt - ½ tsp Cooking Oil - 1tbsp Roasted 5 spices powder: Green Cardamom - 4 Cinnamon - 1 stick Star anise - 1 Nutmeg - ½ Mace/Javitri - 1 whole Roasted 2 spices powder: Fennel seeds/ Saunf- 1 tbsp Coriander seeds - 1 tbsp Method _______________________ 1. Wash and soak basmati rice for 30 minutes. 2. Take a bowl, add chopped Jackfruit/Kathal pieces, garlic paste, cooking oil, salt, and Kashmiri red chilli powder. Mix well and set aside. 3. Heat a pan, roast 5 spices on low to medium heat for 1- 2 minutes, cool and grind it, set aside. Reheat the same pan, roast fennel and coriander seeds until it releases a nice roasted aroma. Cool, grind, and set aside. 4. Soak saffron in warm milk. 5. Heat oil (6 tbsp) in a cooking pot, add ghee (1 tbsp) and whole spices. Let the spices roast well, add sliced onions (150 gm). Stir continuously until it turns light golden brown. Toss curd, green chilies, and garlic paste stir well and add salt as required. Add ½ tsp of ground 5 spices, cook for a minute. Pour water (500 ml) and bring to a boil. Add soaked rice, stir lightly. Cook the rice until it is 80% done or until it is al dente. Keep the cooking pot on low flame for 4-5 minutes. 6. Heat oil in a pan, add marinated jackfruit. Turn once in a while until it is golden brown, set aside. 8. Heat a Tawa, put the cooking pot on the Tawa. Add fried Jackfruit, sprinkle five-spice (½ tsp ) powder and two-spices (½ tsp ) powder. Cover with lid and cook on medium to low heat on dum (10-15 minutes). (You can cover the edges of your vessel with wheat flour dough) 9. Before serving, add barista (crispy fried onions), ghee, saffron milk, and cover with lid for 5 minutes. Serve with fresh mint-yogurt chutney.
