serves 1 Ingredients: • 4 rice paper sheets • 150g chicken breast • 5 Gem lettuce leaves • 1/4 cucumber finely sliced • 1/4 carrot shredded • 1 tbsp sesame seeds • 2 spring onions • fresh coriander leaves sauce: • 2 tbsp sriracha • 1/4 cup high protein greek yoghurt Method: 1. Boil a medium pot of water and poach your chicken breast for 8-10mins or until tender. Once cooked remove from pot and shred using 2 forks. 2. In a small mixing bowl combine yogurt and sriracha. Add your shredded chicken breast and mix. 3. Run your rice paper sheets under water for 2-3 seconds and lay them overlapping in a square with the 2 sheets closest to you stacked under neither the other two. 4. In the centre add your lettuce, then top with chicken, cucumber, carrot, coriander, spring onion and sesame seeds. 5. Fold the 2 sheets closest to you inwards tightly wrapping the filling and continue to roll. 6. Move your roll onto a chopping board and use a sharp knife with a wet blade to slice into 10 bite size rolls.
