This egg roll brings together all my favourite elements - creamy eggs, crispy paratha, some cheese, and a crunchy, zesty kachumbar. It’s bold, delicious, and seriously addictive - you'll want to make it every week! Ingredients: Eggs - 4 nos Grated Cheese - 2 Cubes Salt & Pepper - to Taste Milk - 1 Tbsp Frozen Paranthas - 2 nos Kachumbar : Onion - 2 nos Tomato - 1 no Capsicum - 1 no Green Chilli - 1 no Coriander - 1 Tbsp Mint - 1 Tbsp Lime Juice - 1 Tbsp Salt - to Taste Chaat Masala - 1/2 Tsp Schezwan Sauce - 2-3 Tbsps Process : For the Kachumbar, add sliced onion, capsicum and finely chopped tomatoes, green chillies, coriander leaves & mint leaves to a bowl Season with salt & pepper to taste along with a generous squeeze of lime and a sprinkle of chaat masala - toss well & refrigerate until needed Start by cracking 4 eggs in a bowl - beat them until slightly light & fluffy Next, add in the milk along with some grated cheese & salt & pepper to taste - mix it in Heat up a pan & drizzle some oil Add in the parantha & pan fry it on both sides Reduce the heat to low & add some of the egg mix on top of the parantha, swirl the pan, even it out & quickly flip it Allow the egg mix to cook on low heat & flip the parantha again - allow the bottom to crispen as per your liking & take it off the heat To Assemble : apply a thin layer of schezwan sauce on the egg side Sprinkle some chaat masala & add in the Kachumbar Roll the parantha enclosing the filling & Serve immediately 🌯🍳 #eggroll #breakfastideas #easybreakfast #kathiroll #eggs
