Laurice: / lauriceskitchen and / lauriceskitchen Gilly: / lauriceskitche1 Chocolate Chess Pie 9-inch pie crust 4 ounces semi sweet chocolate, chopped 3 large eggs 1 cup granulated sugar ½ cup packed brown sugar ¼ kosher salt ½ cup evaporated milk ¼ cup butter, softened 1 teaspoon vanilla 3 tablespoons unsweetened cocoa powder 2 tablespoons all-purpose flour Preheat oven to 350°F, 180°C, gas mark 4. Unroll or flatten the pie crust and ease it into an 8-inch deep dish pie plate. Layer the chopped semi sweet chocolate in the bottom of the pie crust and set aside. In a large mixing bowl, whisk together the eggs and sugars until completely combined and the sugars begin to dissolve. Add the vanilla, butter, salt and evaporated milk (not sweetened condensed), and continue to whisk until well combined. Whisk in the cocoa and flour and thoroughly combine. Pour the filling into the pie crust and set on a baking sheet. Bake for 45 minutes to an hour until the filling is just set. If the filling jiggles, continue adding 5 minutes to the baking time until it is set. Allow the pie to cool completely on a wire rack before serving, about 4 hours. Serve with whipped cream and garnish with unsweetened cocoa powder or chocolate shavings.
