Try out this Aloo Anda Curry and let us know your feedback. #AlooAndaCurry #AlooAndaykaSalan #SooperChef Aloo Anda Curry Ingredients for Fried Potatoes Potato (large cubes) 3 cups Salt 1/4 tsp Turmeric powder 1/4 tsp Oil 1 cup Ingredients for Fried Eggs: Boiled eggs 8 Salt 1/4 tsp Turmeric powder 1/4 tsp Red chili powder 1/4 tsp Oil 1 cup Ingredients for Aloo Anda Curry: Oil 1 cup Cumin seeds 1 tbsp Green cardamom 2 Black cardamom 2 Cinnamon sticks 2 Curry leaves 2 Onion (chopped) 1 cup Tomatoes (Skinless & chopped) 1 cup Salt 1 tsp / to taste Ginger garlic paste 1 tbsp Green chilies 2 tsp Yogurt 1/4 cup Turmeric powder 1 tsp Red chili powder 1 tsp Red chili flakes 1 tsp Coriander powder 1 tsp Water 1 cup + 1 cup Fried potatoes Fried eggs Directions Fried Potatoes Preparation: 1. In a bowl add potato cubes, salt, turmeric powder and mix well. Let it rest for 10-15 mins. 2. In a pan heat oil and add marinated potatoes. Cook for 5-6 mins or until potatoes are half done. set aside. Directions for Fried Eggs Preparation: 3. In another bowl add boiled eggs and place cuts on them with knife. Add salt, turmeric powder, red chili powder and mix well. let it rest for 10-15 mins. 4. In a pan heat oil and add marinated eggs, cook for 1-2 mins. Set aside. Directions for Aloo Anda Curry Preparation: 1. In a pot heat oil and add black cardamom, green cardamom, cinnamon sticks, cumin seeds, curry leaves and cook for a minute. 2. Add onion and cook until translucent. Add ginger garlic paste and cook for a minute. 3. Add tomatoes and cook until tomatoes get soft. Add green chilies and mix well. 4. Now add yogurt and cook for a minute. Add salt, red chili powder, turmeric powder, coriander powder and cook until oil separates. 5. Add 1 cup of water and bring it to a simmer. 6. Add fried potatoes and cover and cook until potatoes are fully done. 7. Add fried eggs, 1 cup of water and cook for 1-2 minutes. 8. Garnish with green coriander and serve.
