They’re GLUTEN-FREE, SOY-FREE, NUT-FREE and 100% plant-based. 🌱🔥 I made this recipe with patience, skill and love — and I promise you, if you’re vegan or not, this right here is going to blow you away. The texture is crazy, the flavor is deep, and you can season it or style it however YOU like. Stew it, curry it, braise it — whatever you want. It’s all possible. 😮‍💨 🇭🇹 Haitian-Style Vegan Oxtail Sauce (Finishing Recipe) Ingredients • 2–3 tbsp avocado oil or olive oil • 1 medium onion, diced • 1 bell pepper, diced (green preferred) • 4–6 cloves garlic, minced • 1 scallion, chopped • 1–2 tbsp tomato paste • 1 cup blended tomatoes or crushed tomatoes • 1–2 tbsp Epis (Haitian seasoning base) • 1 tsp thyme • 1 tsp paprika • ½ tsp allspice (optional but traditional) • 1–2 scotch bonnet peppers (whole, do not burst) • 2 cups vegetable broth • 1 tbsp browning (optional, for color) • Salt & black pepper to taste • Butter beans or lima beans (optional but common) • Fresh parsley or scallions for garnish ⸻ Instructions 1. Build the base Heat oil in a heavy pot or Dutch oven over medium heat. Add onions, bell pepper, scallion, and garlic. Sauté until fragrant and softened. 2. Layer the flavor Stir in tomato paste and let it cook down for 2–3 minutes until dark and rich. Add epis, thyme, paprika, and allspice. Stir well. 3. Create the sauce Add blended tomatoes and vegetable broth. Stir to combine, then drop in the whole scotch bonnet peppers. Do not break them unless you want serious heat. 4. Simmer Bring to a gentle boil, then reduce to low and let the sauce simmer uncovered for 15–20 minutes until slightly thickened. 5. Add the vegan oxtails Gently place your prepared vegan oxtails into the sauce. Spoon sauce over them, cover, and simmer on low for 20–30 minutes so they soak up the flavor. 6. Finish Add butter beans if using and simmer 5 more minutes. Taste and adjust salt, pepper, or spice. 7.
