This cake has saved me countless times – whenever I needed something simple yet perfect! An incredibly moist, aromatic, and ultra-creamy chocolate cake with subtle coffee notes. Everything is made in just one pan – no fuss at all. Perfect for parties or simply for afternoon coffee! Recipe: ✅ For the Chocolate Sponge Cake: 4 medium eggs. 1 pinch of salt. 1 cup sugar (200 g). 1 teaspoon vanilla sugar or vanilla extract. Beat the eggs and sugar until light and fluffy, 5–7 minutes. 2/8 cup vegetable oil (100 ml). Mix until smooth. 7/8 cup milk (200 ml). Mix again until well blended. 2 1/2 cups all-purpose flour (300 g). 2 tablespoons cocoa powder (25 g). 2 1/4–2 1/2 teaspoons baking powder (10–12 g or 1 packet). Mix all ingredients together to form a smooth batter. Baking pan: 11 x 8 inches (approx. 28 x 21 cm), at least 5 cm deep, or a 26 cm round springform pan. 🔥 Bake in a preheated oven at 175°C (350°F) for about 25 minutes. Let the cake cool slightly. Prick the cake several times with a fork. ✅ For the syrup: 1 1/4 cups hot milk (300 ml). 1–2 teaspoons instant coffee (5 g). 1 teaspoon vanilla sugar (5 g). Soak the sponge cake evenly with the syrup. ✅ For the cream filling: 1 1/4 cups very cold heavy cream (33–36% fat) (300 ml). 1/3 cup + 1 tablespoon powdered sugar (50 g). Whisk until soft peaks form. 2 tbsp chocolate spread (e.g., Nutella) (60 g). 250 g mascarpone or cream cheese (1 cup). Stir until smooth. ⚠️ Do not overmix, or the cream will curdle. Spread the cream evenly over the cake. For the chocolate ganache: 100 g dark chocolate (50–70% cocoa). ¾ cup + 1 tbsp heavy cream (30–36% fat) (200 ml / 200 g). Microwave. Stir until the chocolate is completely melted and the ganache is glossy. Pour over the cream layer. To finish: Refrigerate the cake for several hours. Remove from the pan. Trim the edges if desired.
