INGREDIENTS: For fry the eggs: Eggs 6-7 Oil 2 tsp Turmeric powder 1/2 tsp Red chilli powder 1/2 tsp METHOD: Boil 6 - 7 eggs, peel them, and make slits on it . In a pan heat 2 tsp oil and add turmeric powder & red chilli powder stir well then add boiled eggs. Fry on low flame for 2 minutes,remove and keep aside for further use. For making the white gravy: Oil 2tbsp Onion 4 medium sized Ginger 1 inch piece Garlic 12 Cloves Green chillies 6 Cashew nuts 20 METHOD: Heat oil in a Kadai and add roughly chopped onion saute on medium flame for 4 min. Add roughly chopped ginger,garlic,green chillies and Cashew nuts,saute on medium flame for 2-3 minutes. Transfer to a plate and let it cool down completely. After cooling transfer to mixer jar and grind it. Then add a bunch of Coriander leaves and grind it again. Then add 1/2 cup of water and grind it to a fine paste. keep it aside for further use. For Making Afghani egg korma: Boiled & Fried eggs Ground paste Oil 2 tbsp Cardamom 3 pods Cloves 3 Cinnamon inch piece Turmeric powder 1/4 tsp Cumin powder 1 tsp Garam masala powder 1 tsp Pepper powder 1 tsp Salt 1 tsp or to taste Water 1.5 cups Dried fenugreek leaves (kasuri methi) 1 tsp Fresh cream 6 tbsp Curd /Yogurt 6 tbsp Freshly chopped coriander leaves 3 tbsp METHOD: Heat oil in a Kadai and add cardamon Clove and cinnamon,saute on low flame for few seconds, then add ground paste, stir well and cook on low to medium flame for 4 minutes. Add turmeric,cumin,pepper, garam masala powder along with salt. Stir for another 4 minutes. Add fresh cream along with curd, stir well and cook on low flame until oil seperates. Then add water and give a mix and bring it to a boil, Once it boils add fried eggs along with kasuri methi , mix it well.Cover and cook on low flame for 5 minutes. After 5 minutes open the lid and give a stir, then add freshly chopped coriander. mix well and turn off the heat.
