VEGGIE DELICACIES MUSHROOM PULAO RECIPE MASALA : In a mixer jar add 1 Teaspoon Pepper corns 1 inch cinnamon 4-6 cloves 2 Tablespoons ginger garlic paste 3-8 green chilies 1 cup fresh mint leaves 1 cup fresh cilantro/ coriander leaves Grind into a fine paste by adding little water. In a heavy bottom pan / pressure cooker / Instant pot add : 4 tablespoons oil 2 tablespoons ghee 2 star anise 2 bay leaves 3-4 cardamom pods 2 stone flower 1 chopped onion 1 chopped tomato 1 pack of chopped mushrooms ( button mushrooms/ white mushrooms) Sauté well and add , 1/2 teaspoon turmeric Salt as per your taste Grinded masala and sauté it well until oil floats on top . Once done , add 2 cups of washed rice of your choice ( I used jeerige sambar rice) and add water accordingly , I added 3 cups of water for 2 cups of rice ! Add salt as per taste and squeeze half lemon juice and cover the lid to cook the rice directly!
