If you want to know how to make a vegan chicken pot pie that is absolutely delicious, hearty and easy to make than this is the video for you. Making vegan food doesn't have to be hard. This is a easy vegan recipe for lunch, and dinner that you will love. Recipe ******* Peel and diced 1 large red potato. Boil until tender Dice 1/2 cup of super firm or extra firm tofu and season with garlic powder and pepper. Sauté one small yellow onion in pan with a little oil. ( I used avocado oil) Cook until translucent Then add 1/2 tsp of crushed garlic. Sauté for 1 min then add the potato's and season with garlic powder, pepper, and parsley. I didn't measure but it was about. 1/2 tsp garlic powder, 1/4 tsp black pepper, 1/2 tsp dried parsley. Then add half a bag of frozen mixed veggies ( about 1 cup) then add vegan chicken broth or veggie broth and 1/2 cup non dairy milk. ( I used almond milk). Add 2 TBS dairy free butter and 2 TBS mixing flour, you can use regular flour or cornstarch. Mix together and let simmer until thick. Once thick add filling to a pie pan or a casserole dish and put a layer of puff pastry over the top. Make sure to trim off the edges. Bake at 400 for 15-20 mins or until golden brown.
