The graham cracker crust is topped with a thick layer of strawberry cheesecake & chopped strawberries. The easy recipe is vegan, dairy-free, and gluten-free friendly! ‌ Ingredients 2 cups graham cracker crumbs 1/2 cup unsalted vegan butter, melted 2 cups raw cashews 1 and 1/2 cups fresh strawberries 1 cup full-fat classic coconut milk 1/2 cup maple syrup 1/4 cup melted coconut oil 2 tbsp lemon juice 2 tsp vanilla extract 1/8 tsp salt 2 cups diced strawberries, for topping ‌ Instructions 1) Line an 8×8-inch baking dish with parchment paper, leaving some of the paper hanging over the edges. This will help you easily remove the bars later on. 2) In a bowl, add graham cracker crumbs and melted vegan butter. Mix together until evenly combined. Transfer to the baking dish. Using clean hands or a silicone spatula, firmly press it against the bottom of the dish. Set aside. 3) In a blender, add raw cashews, strawberries, coconut milk, maple syrup, coconut oil, lemon juice, vanilla extract, and salt. Blend until smooth and creamy. Pour cheesecake over the crust.
