Ghughra is a classic Diwali snack that contains a sweet filling encompassed by a flaky golden brown outer shell. Gujarati Gulab Jamun - • Gujarati Gulab Jamun - ગુજરાતી ગુલાબ જામુન Khaja Puri - • Khaja Puri ખજા પુરી Sakkarpara - • Sakkarpara સક્કરપરા Barfi - • Gujarati Barfi ગુજરાતી બર્ફી Ingredients: Filling: 2 cup sooji/semolina 1 1/3 cup sugar (or to taste) ¼ cup besan/chickpea flour ½ cup fine coconut ½ cup ghee 2 tsp ground cardamom ¼ tsp nutmeg 1/3 cup ghee ----------------------------------------------------- 4 cups cake flour ¼ cup ghee 2 tbsp margarine Warm water Preparation: 1. For the filling, heat a pan on medium low heat and add ¼ cup ghee. 2. Add sooji/semolina and 1/3 cup ghee, cook for several minutes stirring frequently. 3. Add besan/chickpea flour and coconut and cook for a few minutes frequently stirring. 4. Add cardamom, nutmeg, and sugar. Continuously stir mixture and cook until a light golden colour. NOTE: Be careful not to cook on high or leave mixture as it can burn quickly. 5. Remove from heat and let the filling cool completely. 6. In a bowl add cake flour and create a well in the centre. 7. Add ¼ cup ghee, margarine and combine with flour. 8. Gradually add small amounts of warm water to the mixture and pull the dough together until you reach a consistency of the dough that is soft and malleable. 9. Next divide the dough into approximately 2 inch size balls. 10. Knead each ball to create a disk. 11. Roll out the dough and add about 1 ½ to 2 tbsp of filling and seal the edges. 12. Pinch and twist the edges and twist off the end piece to seal. 13. Cover ghughra to avoid drying it out. 14. Heat oil on medium-low heat and fry the ghughra until they are golden brown.
