Here's a recipe that you can try: Ingredients: 2 cups Basmati rice 500g boneless chicken, cut into small cubes 1/2 cup yogurt 2 tbsp ginger-garlic paste 1 tsp cumin powder 1 tsp coriander powder 1 tsp turmeric powder 1 tsp garam masala powder 1 tsp red chili powder 1/2 cup chopped fresh coriander leaves 1/2 cup chopped fresh mint leaves Salt, to taste 2 tbsp vegetable oil 1 large onion, finely sliced 2 green chilies, finely chopped 2 tomatoes, finely chopped 1/2 cup tomato puree 1/2 cup cream 2 tbsp butter 1 tsp kasuri methi 1 lemon, cut into wedges Instructions: Soak the Basmati rice in water for 30 minutes. Drain the water and set aside. In a mixing bowl, combine the boneless chicken, yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, garam masala powder, red chili powder, chopped coriander leaves, chopped mint leaves, and salt. Mix well and marinate for at least 30 minutes. Preheat the oven to 350°F (180°C). Spread the marinated chicken on a baking sheet and bake for 20-25 minutes, until the chicken is cooked through. In a large pot, heat the vegetable oil and fry the sliced onions until golden brown. Add the green chilies and chopped tomatoes and cook for 5 minutes. Add the tomato puree, cream, and butter to the pot and stir well. Cook for another 5 minutes. Add the cooked chicken tikka masala to the pot and stir well. Cook for another 5 minutes. In a separate pot, bring 4 cups of water to a boil. Add the soaked Basmati rice and salt to taste. Cook for 8-10 minutes, until the rice is 90% cooked. Drain the water and set the rice aside. In a large pot, layer half of the cooked rice. Then, layer the chicken tikka masala on top of the rice. Finally, layer the remaining rice on top of the chicken tikka masala. Sprinkle the kasuri methi on top of the rice. Cover the pot with a tight-fitting lid and cook on low heat for 10-15 minutes, until the rice is fully cooked. Serve hot with lemon wedges.
