Easy Shakshuka | Eggs in Tomato Sauce Recipe

Shakshuka Recipe Ingredients: 2 tablespoons Olive Oil 1 yellow onion, diced 1 red bell pepper, seeded and diced (I used yellow and green as well) Salt, to taste Black Pepper, to taste 2 teaspoons paprika 1 teaspoon ground cumin (I use Gheera as a substitute) ¼ teaspoon cayenne pepper or chili powder 1 fresh tomato, washed and diced or 1 28-ounce can of whole peeled tomatoes 6 large eggs 1-2 dashes of Basil 1-2 dashes of Oregano 3 sprigs Parsley, Cilantro, or Celery, chopped 1 tablespoon of my homemade green seasoning blend (optional) Directions: 1. Heat the Olive oil in a small frying pan or skillet on medium heat. Add the diced onion and bell pepper, green seasoning blend, and cayenne pepper, and cook until the onion becomes translucent. 2. Add the garlic and spices and stir to combine for about 1 minute. 3. Add the tomatoes and tomato sauce, along with salt and black pepper, and bring the sauce to a simmer. 4. Crack the eggs on top of the mixture. You can use a spoon to make small holes in the sauce before adding the cracked egg. 5. Cover the skillet and cook until the eggs are done to your liking. 6. Uncover the pan and allow the liquid to dry up some more if this is your desire. 7. Garnish the top of the Shakshuka with chopped cilantro and parsley or celery. 8. Serve the Shakshuka.
